The first thing to remember is that you need a good quality chicken. Flavor enhanced or water expanded chickens will not work properly.
Preheat the oven to 425°F (220°C)
Using kitchen shears or a knife, cut out the backbone
Turn over the chicken, and press down to break the wishbone.
Using your fingers, separate the skin from the flesh on the breasts and thighs
Using a spoon, put a mixture of herbs and liquid under the skin of each quarter. I was using honey, cilantro and soy sauce for this one.
Put the legs in towards the center, and put the backbone across the ends of the drumsticks to prevent burning.
Sprinkle with spice mix and into the oven for 60 minutes.
